Ingredients
1 pound twisted pasta (rotini or fusilli)
2 cups cooked chicken breast, chopped
2 cups Velveeta cheese, cubed
1 cup mozzarella cheese, shredded
1 cup heavy cream
4 garlic cloves, minced
3 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Bring a large pot of salted water to a boil and cook twisted pasta until al dente. Drain and reserve 1/2 cup pasta water.
2. In a skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
3. Pour in heavy cream and stir until warm. Add shredded mozzarella and stir until fully melted into a smooth sauce.
4. Add cubed Velveeta and continue stirring until completely melted and the sauce is creamy.
5. Stir in the cooked chicken breast and add the drained pasta to the skillet. Gently toss everything together until well coated.
6. If needed, loosen the sauce with a splash of reserved pasta water.
7. Season with salt and black pepper. Let simmer for 2–3 minutes to meld flavors.
8. Garnish with chopped fresh parsley before serving.
Notes
This recipe is best served fresh, but leftovers reheat beautifully.
For extra depth, add a pinch of smoked paprika or chili flakes.
