Description
Cheesy Velveeta Rotini with Italian Beef Marinara is the ultimate creamy pasta comfort food, blending melty Velveeta, rich tomato marinara, and savory Italian beef. Perfect for busy weeknights or cozy gatherings, this cheesy beef pasta recipe is easy, hearty, and family-approved.
Ingredients
8 oz rotini pasta
1 lb ground beef
2 cups cubed Velveeta cheese
1 tbsp olive oil
1 small yellow onion, chopped
2 cloves garlic, minced
1 tsp Italian seasoning
1 can (15 oz) crushed tomatoes
2 tbsp tomato paste
1 tsp salt
1/2 tsp black pepper
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; sauté until softened and fragrant.
2. Add ground beef, breaking it up with a spoon. Season with Italian seasoning, salt, and pepper. Cook until browned.
3. Stir in crushed tomatoes and tomato paste. Simmer for 15 to 20 minutes, allowing flavors to develop.
4. Cook rotini in salted boiling water until al dente. Drain and set aside.
5. Add cooked rotini to the beef marinara sauce. Stir in cubed Velveeta and mix until completely melted and creamy.
6. Serve hot with optional garnish of shredded cheese or fresh herbs.
Notes
Velveeta melts best when cubed and added gradually while stirring.
Don’t overcook the pasta—it continues cooking when mixed with the sauce.
Leftovers are even better the next day; reheat gently with a splash of milk.
