Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
16 oz cream cheese, softened
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 (21 oz) can cherry pie filling
Instructions
1. Preheat your oven to 325°F (163°C) and line a 9×13 inch pan with parchment paper.
2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press firmly into the bottom of the pan to form the crust. Bake for 10 minutes and let cool slightly.
3. In a separate bowl, beat softened cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, mixing gently. Stir in vanilla extract.
4. Pour the cheesecake mixture over the baked crust and smooth the surface. Bake for 30–35 minutes until set but slightly jiggly in the center.
5. Let cool at room temperature, then refrigerate for at least 3 hours until fully set.
6. Once chilled, spread cherry pie filling evenly over the cheesecake layer.
7. Slice into squares with a sharp knife dipped in warm water, wiping between cuts. Serve chilled.
Notes
Chill the bars completely before slicing for the cleanest cuts.
You can make this ahead up to 2 days and store in the fridge.
Use fresh cherry topping if you prefer homemade over canned.
