Description

Creamy Chicken Alfredo Pasta is a comforting Italian-inspired dish made with tender chicken breast, rich homemade Alfredo sauce, and fettuccine. This easy recipe is perfect for weeknight dinners or special occasions and pairs beautifully with garlic bread or roasted vegetables.


Ingredients

1 lb chicken breast

12 oz fettuccine pasta

2 cups heavy cream

1 cup freshly grated Parmesan cheese

3 tbsp butter

3 cloves garlic, minced

1 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

2 tbsp chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook fettuccine until al dente. Reserve 1/2 cup of pasta water, then drain.

2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Sear until golden and cooked through. Remove and set aside.

3. In the same skillet, reduce heat to medium. Melt butter, add garlic, and cook for 1 minute until fragrant.

4. Pour in heavy cream and simmer for 3–4 minutes, allowing it to thicken slightly.

5. Stir in Parmesan cheese, whisking until smooth. Add a splash of reserved pasta water if the sauce is too thick.

6. Add cooked pasta to the skillet and toss to coat. Return chicken to the pan and combine everything well.

7. Taste and adjust seasoning. Garnish with parsley if using. Serve hot.

Notes

Use freshly grated Parmesan for best texture and flavor.

Don’t overheat the sauce once cheese is added to avoid separation.

Leftovers? Add a splash of milk before reheating to keep it creamy.
