Ingredients
1 lb chicken breast
12 oz fettuccine pasta
1 ½ cups heavy cream
1 cup freshly grated parmesan cheese
3 cloves garlic, minced
3 tbsp butter
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
2 tbsp chopped fresh parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Reserve ½ cup of pasta water, then drain and set aside.
2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Sear chicken 6–7 minutes per side, until golden and cooked through. Transfer to a plate and let rest before slicing.
3. In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
4. Pour in heavy cream and bring to a gentle simmer. Stir for 2–3 minutes.
5. Gradually whisk in parmesan cheese until sauce is smooth and creamy.
6. Toss cooked pasta in the sauce. Add reserved pasta water if needed to loosen.
7. Slice the chicken and place over pasta. Garnish with chopped parsley if using.
8. Serve immediately with extra parmesan if desired.
