Description

Ingredients

4 cube steaks

1 cup all-purpose flour

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

2 large eggs

1 cup buttermilk

1 cup vegetable oil (for frying)

2 tablespoons butter

2 cups milk (for gravy)

3 tablespoons reserved seasoned flour (from dredging)


Instructions

1. Set up two shallow dishes: one with the flour, salt, pepper, garlic powder, and paprika. The other with whisked eggs and buttermilk.

2. Dredge each steak in the flour mixture, then the egg mixture, then back into the flour. Press to adhere well.

3. Heat vegetable oil in a skillet over medium heat. Fry steaks in batches until golden brown, 3 to 4 minutes per side. Transfer to paper towels to drain.

4. Pour out excess oil, leaving 2 tablespoons in the skillet. Add butter, then whisk in 3 tablespoons of the leftover seasoned flour.

5. Cook the roux for about 1 minute, then slowly whisk in milk. Let it simmer and thicken to your desired gravy consistency.

6. Season the gravy with extra salt and plenty of black pepper.

7. Serve the steaks hot with generous spoonfuls of creamy gravy on top.

Notes

Use cube steak for best texture and even breading.

Don’t overcrowd the skillet to maintain the perfect crispy coating.

Gravy too thick? Add a splash of milk until it loosens.
