Ingredients
1 lb ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 egg
1 tbsp lemon juice
1 tsp lemon zest
2 tbsp butter
1 tbsp olive oil
1 cup chicken broth
2 tbsp capers
1 tbsp chopped fresh parsley
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. In a large bowl, mix ground chicken, breadcrumbs, Parmesan, garlic, lemon zest, egg, salt, and pepper until just combined.
2. Form into 1.5-inch meatballs using damp hands or a scoop.
3. Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides until golden. Remove from skillet.
4. In the same skillet, melt butter and add garlic. Cook for 1 minute.
5. Pour in chicken broth and lemon juice. Stir in capers and simmer gently.
6. Return meatballs to skillet and simmer for 5–7 minutes until cooked through.
7. Garnish with parsley and serve hot.
Notes
Juicier meatballs come from using ground chicken with a little fat.
Don’t skip the lemon zest—it adds bright flavor depth.
Use fresh parsley at the end for a clean, herby finish.
