Ingredients

1 lb chicken breasts

1 tsp salt

½ tsp black pepper

1 tbsp olive oil

2 tbsp butter

4 garlic cloves, minced

2 cups chicken broth

1 cup heavy cream

1 cup long-grain white rice

¾ cup grated Parmesan cheese

2 tbsp lemon juice

2 tbsp chopped fresh parsley


Instructions

1. Season chicken breasts with salt and pepper on both sides.

2. In a large skillet over medium-high heat, heat olive oil and sear chicken until golden brown, about 4–5 minutes per side. Remove and set aside.

3. Lower heat slightly and add butter to the skillet. Sauté minced garlic for 30 seconds until fragrant.

4. Add rice and stir to coat it in the garlic butter mixture.

5. Pour in chicken broth and heavy cream. Stir to combine.

6. Bring mixture to a simmer, then cover and cook over low heat for 18–20 minutes, stirring occasionally, until rice is tender.

7. Stir in Parmesan cheese and lemon juice.

8. Return seared chicken to the skillet, nestling it into the rice. Cover and heat for 5 more minutes.

9. Garnish with chopped parsley and serve hot.

Use freshly grated Parmesan for the best texture and flavor.
