Ingredients

2 chicken breasts

4 cloves garlic, minced

1 cup parmesan cheese, grated

3 tablespoons butter

2 tablespoons olive oil

2 cups chicken broth

2 tablespoons lemon juice

1 cup white rice

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons chopped parsley (optional)


Instructions

1. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper and sear until golden and cooked through. Remove and set aside.

2. In the same skillet, melt butter. Add minced garlic and sauté until fragrant.

3. Stir in uncooked white rice and toast for 1–2 minutes.

4. Add chicken broth and lemon juice. Bring to a simmer, cover, and cook for 18–20 minutes until rice is tender.

5. Stir in grated parmesan until creamy and well combined.

6. Return chicken to the skillet and mix with the rice to reheat.

7. Garnish with fresh parsley and serve hot.
