Ingredients

2 large chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

3 tablespoons chili garlic sauce

4 tablespoons butter

1 tablespoon olive oil

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon Cajun seasoning

3 garlic cloves, minced

1 cup corn kernels (fresh or frozen)

10 ounces rotini or fusilli pasta

2 tablespoons fresh parsley, chopped


Instructions

1. Cut the chicken breast into bite-sized pieces and season with salt and pepper.

2. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat.

3. Sear the chicken until golden brown and cooked through, about 6–8 minutes.

4. Reduce the heat and stir in chili garlic sauce and 1 tablespoon butter. Toss chicken to coat evenly and let simmer for 1–2 minutes.

5. Meanwhile, cook the pasta in salted boiling water until al dente. Drain and set aside.

6. In the same skillet, melt 2 tablespoons butter. Add minced garlic and sauté for 30 seconds.

7. Add corn and Cajun seasoning. Stir and cook for 2–3 minutes.

8. Pour in heavy cream and bring to a simmer.

9. Stir in Parmesan cheese and mix until smooth and creamy.

10. Add cooked pasta to the sauce and toss until well coated.

11. Serve pasta in bowls topped with chili garlic butter chicken bites.

12. Garnish with fresh parsley and serve immediately.

Notes

Use fresh or frozen corn, but thaw frozen corn before cooking.

For extra richness, add an extra splash of cream while reheating leftovers.
