Ingredients
1 lb chicken breast
4 cups green cabbage, chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
3 tablespoons soy sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil
3 green onions, sliced
1 tablespoon rice vinegar
1 tablespoon cornstarch
Instructions
1. Slice chicken breast thinly against the grain and toss with cornstarch.
2. Heat vegetable oil in a wok over high heat. Add chicken in a single layer. Sear for 2–3 minutes, stir, and cook until golden. Remove and set aside.
3. In the same pan, add more oil if needed. Sauté garlic and ginger quickly until fragrant.
4. Add chopped cabbage and stir-fry for 5–7 minutes until just softened and lightly caramelized.
5. Return the chicken to the pan. Add soy sauce, rice vinegar, and sesame oil. Toss well to coat.
6. Add green onions, stir, and serve immediately over rice or noodles.
Notes
Use tamari instead of soy sauce for gluten-free option.
Do not overcook the cabbage—aim for tender with a slight crunch.
Add chili flakes or sriracha for a spicy kick.
