Ingredients
1 ½ lbs chicken thighs
2 chipotle peppers in adobo sauce
2 garlic cloves
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon paprika
1 ½ cups cooked black beans
1 ½ cups corn kernels
2 cups cooked rice
2 tablespoons lime juice
½ cup Greek yogurt or sour cream
2 tablespoons mayonnaise
¼ cup chopped fresh cilantro
Instructions
1. Blend chipotle peppers, garlic, olive oil, cumin, paprika, and salt until smooth. Marinate chicken thighs for at least 30 minutes.
2. Heat skillet over medium-high. Cook chicken for 5-6 minutes per side until cooked through and charred. Let rest and slice.
3. Whisk yogurt, mayonnaise, adobo sauce, and lime juice in a bowl. Season with salt to taste.
4. Warm black beans and corn in a pan. Optionally add cumin or lime juice for flavor.
5. Assemble bowls: start with rice, add chicken, beans, corn, sauce, and top with cilantro and more lime juice.
