Description

Ingredients

1 cup chocolate cookie crumbs

4 tablespoons unsalted butter, melted

8 ounces cream cheese, softened

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/3 cup caramel sauce

2/3 cup semi-sweet chocolate chips

1/4 cup heavy cream


Instructions

1. Line a mini muffin tin with 24 paper liners and lightly spray with nonstick spray.

2. Mix chocolate cookie crumbs with melted butter and press into each muffin cup. Bake at 325°F for 5 minutes. Let cool.

3. In a bowl, beat cream cheese until smooth. Add sugar, egg, and vanilla. Blend until creamy.

4. Spoon cheesecake mixture over crusts. Bake at 325°F for 12–15 minutes, or until centers are just set. Cool completely, then chill for at least 2 hours.

5. Once chilled, add a thin layer of caramel sauce to each cheesecake bite. Chill for 15 minutes to firm.

6. Melt chocolate chips and heavy cream together until smooth. Spoon over caramel layer and spread to edges.

7. Chill bites until set. Serve cold or at room temperature.

Notes

These freeze well—store in layers with parchment between.

Use full-fat cream cheese for the best texture.

Chill after each layer for cleaner, neater bites.
