These Chocolate Maraschino Cherry Coconut Truffles are a no-bake, easy-to-make dessert that combines juicy cherries, sweet coconut, and rich chocolate. Ingredients
12 maraschino cherries
1 ½ cups sweetened shredded coconut
½ cup sweetened condensed milk
¾ cup powdered sugar
1 teaspoon vanilla extract
1 ½ cups semi-sweet chocolate chips
1 tablespoon coconut oil (optional)
Instructions
1. Drain the maraschino cherries and pat them completely dry using paper towels.
2. In a bowl, mix shredded coconut, sweetened condensed milk, powdered sugar, and vanilla extract until a thick dough forms.
3. Take a tablespoon of the coconut mixture, flatten it in your hand, place a cherry in the center, and wrap the coconut around to form a ball.
4. Repeat with all cherries, then chill the balls in the fridge or freezer for 20 to 30 minutes until firm.
5. Melt chocolate chips in a heatproof bowl using a double boiler or microwave in 20-second intervals. Stir until smooth. Add coconut oil for thinning and shine, if using.
6. Dip each chilled ball into melted chocolate, coating fully, and place on parchment paper.
7. Let truffles set at room temperature or refrigerate until the chocolate hardens.
8. Store in an airtight container in the fridge for up to 10 days or freeze for longer.

Make sure cherries are fully dried before wrapping to help the coconut adhere.
You can use dark chocolate or white chocolate based on your preference.
