Description

These Chocolate Peppermint Sandwich Cookies are the ultimate festive treat. Rich, chewy chocolate cookies filled with a creamy peppermint frosting make a perfect holiday dessert or gift. Ingredients

1 cup unsalted butter (softened)

1 cup brown sugar

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter (for filling)

2 cups powdered sugar

2 tablespoons heavy cream

1/2 teaspoon peppermint extract

1/3 cup crushed peppermint candies or candy canes (optional for garnish)


Instructions

1. Cream together 1 cup softened butter, brown sugar, and granulated sugar until light and fluffy.

2. Add the egg and vanilla extract and beat until combined.

3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.

4. Gradually mix dry ingredients into the wet mixture until a soft dough forms.

5. Chill the dough in the refrigerator for at least 30 minutes.

6. Preheat the oven to 350°F (175°C).

7. Scoop dough into 1-tablespoon balls and place on a parchment-lined baking sheet.

8. Bake for 8–10 minutes or until edges are set. Let cookies cool completely.

9. For the filling, beat 1/2 cup softened butter until smooth, then add powdered sugar, peppermint extract, and heavy cream. Beat until light and fluffy.

10. Match cookies by size. Spread or pipe the peppermint filling onto one cookie, then top with the second.

11. Roll the edges in crushed peppermint candies if desired.

Notes

Make sure the cookies are completely cool before adding filling to prevent melting.

You can freeze the cookie dough or assembled cookies for up to 2 months.

Rolling the edges in peppermint gives a festive look and extra crunch.
