Ingredients
1 cup unsalted butter softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all purpose flour
1/2 cup unsweetened cocoa powder
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup granulated sugar for rolling
1 tablespoon ground cinnamon
Instructions
1. Cream butter and sugar together until light and fluffy.
2. Add eggs and vanilla extract and mix until smooth.
3. In a separate bowl combine flour, cocoa powder, cream of tartar, baking soda, and salt.
4. Gradually mix dry ingredients into wet ingredients until a soft dough forms.
5. Cover and chill the dough for 30 minutes.
6. Preheat oven to 350°F or 175°C and line a baking sheet with parchment paper.
7. Mix sugar and cinnamon in a small bowl for coating.
8. Roll dough into balls and coat each one in the cinnamon sugar mixture.
9. Place on baking sheet with space between each cookie.
10. Bake for 9 to 11 minutes until edges are set and centers remain soft.
11. Cool slightly before transferring to a wire rack and serve.
Notes
Chill the dough to control spreading and improve texture.
Avoid overbaking to keep the centers soft and chewy.
