Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 large egg
1 teaspoon vanilla extract
2.5 cups all-purpose flour
0.5 teaspoon salt
Instructions
1. Cream the butter and sugar together until light and fluffy.
2. Add lemon zest, lemon juice, egg, and vanilla. Mix until well blended.
3. In a separate bowl, whisk together the flour and salt. Gradually add to wet ingredients.
4. Mix until dough forms. Do not overmix.
5. Wrap dough in plastic and chill for at least 1 hour.
