Description

This vibrant Christmas Salad is the perfect holiday side dish made with arugula, spinach, pomegranate seeds, pears, feta, and candied pecans, topped with a tangy balsamic vinaigrette. A festive salad recipe that’s refreshing, colorful, and easy to prepare for Christmas dinner or winter celebrations.

Ingredients

4 cups arugula

2 cups baby spinach

1 cup pomegranate seeds

1 large ripe pear, thinly sliced

1 ½ cups candied pecans

½ cup feta cheese, crumbled

¼ small red onion, thinly sliced

⅓ cup balsamic vinaigrette

Instructions

1. Wash and dry the arugula and spinach thoroughly. Combine them in a large mixing bowl.

2. Add the pomegranate seeds, sliced pear, and red onion evenly over the greens.

3. Sprinkle crumbled feta cheese and candied pecans across the top.

4. Drizzle the balsamic vinaigrette over the salad just before serving or serve it on the side.

5. Toss gently to combine, being careful not to bruise the greens or fruit. Serve immediately.

Notes

Use fresh, crisp greens to keep the salad vibrant.

Dress the salad just before serving to avoid sogginess.

Substitute apples or goat cheese if desired for variety.
