Ingredients
2 1/4 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup unsalted butter softened
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
8 ounces cream cheese softened
1/2 cup powdered sugar
1 tablespoon milk
1/2 cup granulated sugar for coating
2 teaspoons ground cinnamon
Instructions
1. Preheat oven to 350°F and line baking sheets with parchment paper.
2. Beat cream cheese, powdered sugar, milk, and 1 teaspoon vanilla until smooth then chill for easier scooping.
3. Cream butter and sugar until light and fluffy then mix in eggs and remaining vanilla.
4. Stir in flour, baking powder, and salt until a soft dough forms.
5. Scoop cookie dough and flatten slightly then place a small scoop of cheesecake filling in the center.
6. Wrap dough around filling sealing edges completely.
7. Mix cinnamon and sugar in a bowl then roll each cookie dough ball to coat fully.
8. Place on baking sheet spaced apart and bake 12 to 14 minutes until edges are set.
9. Cool slightly before serving so filling sets but remains creamy.
Notes
Chilling the cheesecake filling prevents it from leaking while baking.
Do not overbake or cookies will lose their soft texture.
