Description
These Cinnamon Apple Cottage Cheese Bites are a high-protein snack or breakfast idea made with cottage cheese, oats, cinnamon, and diced apples. Perfect for meal prep, naturally gluten-free, and packed with fall flavor, these bites are easy to bake and enjoy any time of day.
Ingredients
1 cup cottage cheese
2 large eggs
1/2 cup rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 tablespoons honey or maple syrup
1/2 cup diced apple
1/8 teaspoon salt
Instructions
1. Preheat the oven to 350°F and prepare a mini muffin tin or silicone mold by greasing or lining.
2. In a blender or food processor, add cottage cheese, eggs, oats, baking powder, cinnamon, vanilla extract, honey or maple syrup, and salt. Blend until smooth.
3. Transfer the blended mixture into a bowl and gently fold in the diced apples.
4. Fill the muffin cups 3/4 full with the batter.
5. Bake for 18 to 20 minutes, or until centers are set and a toothpick inserted comes out clean.
6. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool fully.
7. Serve warm or refrigerate for later.
Notes
These bites can be frozen for up to 2 months and reheated easily.
You can swap honey for maple syrup or agave to suit your taste or diet.
Make sure not to blend the apples to preserve bite-sized pieces in the mix.
