Classic Butter Thumbprint Cookies are buttery shortbread cookies filled with fruity jam centers. This easy thumbprint cookie recipe makes a perfect holiday treat or afternoon tea snack. Soft, rich, and endlessly customizable!
Ingredients
1 cup unsalted butter, softened
0.5 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
0.25 teaspoon salt
0.5 cup jam or preserves (raspberry, apricot, or strawberry)
Instructions
1. Beat unsalted butter and sugar until light and fluffy.
2. Add vanilla extract and mix until incorporated.
3. Add flour and salt, mix just until dough forms.
4. Shape into 1-inch balls and place on parchment-lined baking sheet.
5. Make a thumbprint in the center of each ball.
6. Chill for 30 minutes.
7. Fill each thumbprint with about 0.5 teaspoon of jam.
8. Bake at 350°F (175°C) for 12–14 minutes until edges are lightly golden.
9. Cool on baking sheet for a few minutes, then transfer to wire rack.
Notes
Use a thick jam to prevent spreading during baking.
Chilling the dough helps the cookies keep their shape.
