Ingredients
1 pie crust (homemade or store-bought)
1/2 cup unsalted butter, melted
1 1/2 cups granulated sugar
3 large eggs
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon lemon juice
Instructions
1. Preheat oven to 350°F and prepare a 9-inch pie crust in a pie dish. Chill while mixing the filling.
2. In a large mixing bowl, whisk melted butter with sugar until smooth.
3. Beat in eggs one at a time until fully incorporated.
4. Add flour and salt, mixing until no lumps remain.
5. Slowly add buttermilk, then stir in vanilla and lemon juice.
6. Pour filling into prepared crust.
7. Bake for 45 to 55 minutes until center is set and top is golden.
8. Cool completely before slicing and serving.
Notes
Use room temperature ingredients for a smoother filling.
If your crust browns too quickly, cover the edges with foil.
The pie sets more as it cools, so don’t slice it too soon.
