Description

Ingredients

2 cups shredded cooked chicken

16 oz gnocchi (shelf-stable or fresh)

2 carrots, diced

2 celery stalks, diced

1 small onion, diced

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 tablespoons butter

2 tablespoons all-purpose flour

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

2 tablespoons fresh chopped parsley


Instructions

1. In a large pot, heat olive oil and butter over medium heat. Add diced onion, carrots, and celery. Sauté until softened, about 5 minutes.

2. Stir in minced garlic and cook for another minute until fragrant.

3. Sprinkle flour over the vegetables and stir to coat evenly. Cook for 2 minutes to remove raw flour taste.

4. Slowly pour in chicken broth while stirring to combine. Scrape any browned bits off the pot’s bottom.

5. Bring to a simmer and stir in shredded chicken, thyme, salt, and pepper. Let cook for 10 minutes.

6. Add the gnocchi to the pot and cook according to package directions, about 2–4 minutes, until tender.

7. Lower the heat and stir in the heavy cream. Warm through without boiling.

8. Add fresh parsley and adjust seasoning if needed. Serve warm and enjoy.

Notes

This recipe is ideal for using leftover or rotisserie chicken.

Fresh parsley adds brightness and freshness before serving.
