Description
Soft and buttery Coffee Cake Cookies with a cinnamon crumb topping and vanilla glaze. These cookies are perfect for breakfast or dessert and packed with cozy flavor. Great with coffee and easy to freeze!
Ingredients
1 ½ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon cinnamon
½ cup brown sugar
¼ cup white sugar
½ cup salted butter, melted
1 large egg
1 teaspoon vanilla extract
⅓ cup powdered sugar
1 to 2 tablespoons milk or cream

Instructions
1. In a large bowl, mix melted butter, brown sugar, and white sugar until smooth.
2. Add the egg and vanilla, stir to combine.
3. Stir in flour, cinnamon, and baking soda until a soft dough forms. Chill for 30 minutes.
4. In a separate bowl, mix crumb topping ingredients until crumbly.
5. Scoop dough onto lined baking sheet, flatten slightly, and top with crumb mixture.
6. Bake at 350°F (175°C) for 10–12 minutes until edges are golden.
7. Cool cookies on the sheet before glazing.
8. Mix powdered sugar with milk to create glaze, then drizzle over cooled cookies.
Notes
These cookies are best enjoyed slightly warm or at room temperature.
Double the crumb topping if you love an extra crunch.
Chilling the dough prevents the cookies from spreading too much.
