Ingredients
2 cups diced potatoes
1 ½ cups shredded or chopped corned beef
1 medium onion, chopped
2 cloves garlic, minced
2 tablespoons butter or oil
½ teaspoon salt
¼ teaspoon black pepper
4 eggs (optional, for serving)
Instructions
1. Dice the potatoes and parboil them in salted water for 5 to 7 minutes until just tender. Drain and steam dry.
2. In a large skillet over medium heat, melt butter or heat oil. Add chopped onions and sauté until translucent. Stir in minced garlic and cook for 1 more minute.
3. Add parboiled potatoes to the skillet. Let them sit undisturbed to crisp up, then flip. Season with salt and pepper.
4. Fold in the corned beef and press the mixture down in the pan. Let it cook until crispy on the edges, stirring occasionally.
5. If using eggs, fry them in a separate pan to your liking. Serve the hash hot, topped with eggs and fresh parsley or hot sauce if desired.
Notes
This dish works great with either canned or leftover corned beef.
Steam-drying the potatoes after boiling helps them crisp up better.
You can add bell peppers or jalapeños for extra flavor and heat.
