Ingredients
0.75 cup unsalted butter, melted
0.75 cup granulated sugar
0.25 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
0.5 cup unsweetened cocoa powder
0.75 cup all-purpose flour
0.25 teaspoon salt
0.5 cup heavy cream
1 cup semi-sweet chocolate chips
0.25 cup rainbow candy-coated chocolate chips
Instructions
1. Preheat oven to 350°F and line an 8×8-inch baking pan with parchment paper, leaving overhang on the sides.
2. In a bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
3. Add eggs and vanilla extract, and mix well.
4. Sift in cocoa powder, flour, and salt. Stir until just combined.
5. Pour batter into the pan and smooth the top.
6. Bake for 18–22 minutes, until a toothpick comes out with a few moist crumbs. Let cool completely.
7. Heat heavy cream in a saucepan until steaming, then pour over chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth.
8. Spread ganache evenly over cooled brownies.
9. Top with rainbow candy-coated chocolate chips.
10. Refrigerate for 1 hour or until ganache is set.
