This Cottage Cheese Chicken Salad Sandwich is a protein-packed, healthy twist on classic chicken salad. Made with cottage cheese, chicken, celery, and tangy mustard, it’s perfect for meal prep, low-carb lunches, or easy sandwiches. Enjoy creamy texture, bold flavor, and low-fat nutrition in one delicious bite.

Ingredients

1 ½ cups cooked chicken, shredded or chopped

¾ cup cottage cheese

1 stalk celery, diced

2 tablespoons finely diced red onion

1 tablespoon Dijon mustard

1 tablespoon lemon juice

¼ teaspoon salt

⅛ teaspoon black pepper

4 slices whole grain bread or lettuce leaves for serving

Instructions

1. Shred or chop the cooked chicken into bite-sized pieces.

2. In a medium mixing bowl, combine cottage cheese, Dijon mustard, lemon juice, salt, and pepper. Mix until smooth.

3. Add diced celery and red onion to the bowl. Stir gently.

4. Fold in the shredded chicken and mix well until evenly coated.

5. Spoon mixture onto bread slices or into lettuce wraps.

6. Serve immediately or chill before serving for a firmer texture.

Notes

This chicken salad tastes even better after a few hours in the fridge.

Swap in Greek yogurt or add a spoon of mayo for extra creaminess.

Add sliced grapes or chopped walnuts for a sweet or crunchy twist.
