Description

This Cottage Cheese & Spinach Crustless Quiche is a protein-packed, low-carb breakfast or brunch option. Made with cottage cheese, spinach, and eggs, it’s gluten-free and easy to bake. A healthy and flavorful meal prep-friendly dish perfect for vegetarians.


Ingredients

6 large eggs

1 cup cottage cheese

1 cup shredded cheddar or mozzarella cheese

1 cup spinach, thawed and squeezed if frozen

1 small onion, finely chopped

1 teaspoon garlic powder

0.5 teaspoon salt

0.25 teaspoon black pepper


Instructions

1. Preheat oven to 375°F and grease a 9-inch pie dish.

2. In a mixing bowl, whisk together eggs, cottage cheese, shredded cheese, onion, garlic powder, salt, and pepper.

3. Stir in spinach until evenly combined.

4. Pour the mixture into the prepared dish.

5. Bake for 35 to 40 minutes or until the top is golden and the center is set.

6. Let it cool for 5 to 10 minutes before slicing and serving.

Notes

Use either fresh sautéed spinach or frozen spinach, but always remove excess moisture.

Feel free to switch up the cheese to gouda, Swiss, or feta for a twist.
