Description
Cowboy Butter Chicken Linguine is a creamy, garlicky pasta dinner with tender chicken, zesty herbs, and bold cowboy butter flavor. This easy chicken linguine recipe is perfect for weeknights or special occasions.
Ingredients
12 ounces linguine
2 boneless skinless chicken breasts
6 tablespoons unsalted butter
4 garlic cloves minced
3 tablespoons fresh parsley chopped
1 teaspoon red pepper flakes
2 tablespoons lemon juice
Salt and pepper to taste
Instructions
1. Bring a large pot of salted water to a boil and cook the linguine until al dente. Drain, reserving ½ cup of pasta water.
2. In a skillet over medium heat, melt butter. Add garlic and cook for 1 minute.
3. Stir in parsley, red pepper flakes, and lemon juice. Remove half of this cowboy butter and set aside.
4. Season chicken with salt and pepper. Cook in the skillet with remaining cowboy butter for 5-7 minutes per side until cooked through. Slice into strips.
5. Return cooked linguine to the skillet. Toss with reserved cowboy butter, adding pasta water if needed.
6. Top with sliced chicken, garnish with parsley, and serve hot.
Notes
Use fresh parsley for the brightest flavor.
Don’t overcook the chicken to keep it tender.
Add extra pasta water if sauce feels too thick.
