Ingredients
1 ¾ cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
2 large eggs
¾ cup milk
½ cup vegetable oil
1 tablespoon orange zest
⅓ cup fresh orange juice
1 cup cranberries (fresh or dried)
Instructions
1. Preheat oven to 350°F and grease or line 4–6 mini loaf pans.
2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
3. In another bowl, beat the eggs, then stir in milk, oil, orange juice, and orange zest.
4. Pour wet ingredients into the dry ingredients and stir just until combined.
5. Fold in the cranberries gently to evenly distribute.
6. Divide batter between pans and bake for 25–30 minutes or until a toothpick comes out clean.
7. Cool loaves in the pan for 10 minutes, then transfer to a wire rack.
8. Serve warm or at room temperature. Glaze optional.
Notes
Use fresh cranberries for tart bursts or soak dried ones in orange juice for 15 minutes before baking.
Don’t overmix the batter to keep the loaves soft and tender.
