Description

Cranberry Raisin Walnut Cinnamon Artisan Bread is a no-knead, rustic loaf packed with dried cranberries, raisins, and walnuts. This cozy cinnamon bread recipe is perfect for breakfast, brunch, or holiday gatherings. It’s easy to make and yields a crusty exterior with a soft, flavorful interior. Ideal for toasting or pairing with cheese and honey.


Ingredients

430g bread flour

1½ tsp salt

1 tsp ground cinnamon

¾ tsp instant yeast

345ml warm water

100g dried cranberries

80g raisins

90g chopped walnuts


Instructions

1. In a large bowl, mix bread flour, salt, cinnamon, and yeast. Add warm water and stir until combined into a sticky dough.

2. Fold in cranberries, raisins, and walnuts until evenly distributed.

3. Cover bowl and let the dough rise at room temperature for 12 to 18 hours.

4. Turn dough onto a floured surface. Shape gently into a ball. Rest 30 minutes.

5. Preheat oven to 450°F with a Dutch oven inside during resting time.

6. Place the dough on parchment paper, lower it into the hot Dutch oven. Cover and bake for 30 minutes.

7. Remove lid and bake for another 15–20 minutes until deep golden brown.

8. Cool completely on a wire rack before slicing.

Notes

Let the bread cool before slicing to prevent gumminess.

You can substitute part of the flour with whole wheat for a nuttier flavor.

Use parchment to easily transfer the dough to the Dutch oven.
