Ingredients
225g pasta
4 oz cream cheese
2 tablespoons butter
2 garlic cloves, minced
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated parmesan cheese (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water, then drain the pasta.
2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1 to 2 minutes until fragrant.
3. Add cream cheese to the skillet and stir until melted. Gradually pour in the milk while whisking to create a smooth sauce. Let it simmer for 2 to 3 minutes.
4. Add the cooked pasta to the skillet and toss until evenly coated in the sauce. If the sauce is too thick, add a splash of reserved pasta water.
5. Season with salt and black pepper. Stir in parmesan cheese if using, and serve immediately with optional herbs or chili flakes.
Notes
The sauce thickens as it sits, so add a bit of milk or water when reheating.
For extra richness, use whole milk or a splash of cream.
