Ingredients
24 green olives, pitted (stuffed if desired)
4 oz cream cheese, softened
1 cup sharp cheddar cheese, shredded
1/2 cup all-purpose flour
1/4 cup unsalted butter, cold and cubed
1/4 tsp paprika or cayenne pepper (optional)
Instructions
1. In a bowl, mix softened cream cheese and shredded cheddar until smooth.
2. Stir in paprika or cayenne if using. Add flour and mix until incorporated.
3. Add cold butter cubes and work into the dough with your fingers or pastry cutter until the dough forms.
4. Chill the dough in the refrigerator for 15 minutes.
5. Pat olives dry with a paper towel. Take a small piece of dough, flatten into a disk, and wrap each olive completely.
6. Place wrapped olives on a parchment-lined baking sheet. Chill for 20 minutes.
7. Preheat oven to 375°F (190°C).
8. Bake olives for 15 to 18 minutes or until golden brown.
9. Let cool slightly before serving.
Notes
These are best served warm for optimal texture.
Use garlic or pimiento-stuffed olives for extra flavor.
Can be made ahead and frozen before baking.
