Description

A bold and creamy comfort meal, this Creamy Cajun Chicken Fettuccine with Garlic Mozzarella Cheese Sauce is packed with Cajun-spiced chicken, rich garlic cheese sauce, and tender pasta. A satisfying and quick weeknight dinner that’s loaded with flavor and loved by the whole family.


Ingredients

1 pound fettuccine

2 large chicken breasts

1 ½ tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons butter

1 ½ cups heavy cream

1 ½ cups shredded mozzarella cheese

½ cup grated parmesan cheese

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Slice chicken breasts into strips and coat with Cajun seasoning.

2. Heat olive oil in a skillet over medium-high heat and sear chicken until golden and cooked through. Remove and set aside.

3. Cook fettuccine in a large pot of salted boiling water until al dente. Drain, reserving ½ cup pasta water.

4. In the same skillet, reduce heat to medium. Melt butter, add garlic, and sauté until fragrant.

5. Pour in heavy cream and let it simmer. Stir in mozzarella and parmesan until melted and smooth.

6. Season with salt and black pepper to taste.

7. Return chicken to skillet and add fettuccine. Toss everything together, adding reserved pasta water if needed to loosen sauce.

8. Serve hot, garnished with fresh parsley.

Notes

This recipe can be adjusted for spice level by reducing or increasing the Cajun seasoning.

If the sauce thickens too much during reheating, add a splash of milk or cream.

For extra richness, add sautéed mushrooms or a few slices of sun-dried tomato to the sauce.
