Ingredients
12 oz linguine
2 large chicken breasts
2 tbsp olive oil
2 tbsp Cajun seasoning
4 cloves garlic minced
3 tbsp butter
2 tbsp all-purpose flour
2 cups chicken broth
1 cup heavy cream
1 cup cheddar cheese shredded
1/2 cup Parmesan cheese grated
1/2 tsp red pepper flakes optional
2 tbsp fresh parsley chopped
Instructions
1. Pat chicken dry, season with Cajun seasoning, and sear in olive oil over medium-high heat until golden and cooked through. Remove and rest before slicing.
2. Bring a large pot of salted water to a boil, cook linguine until al dente, and reserve 1 cup pasta water before draining.
3. In the same skillet, melt butter and sauté garlic until fragrant. Whisk in flour to form a roux.
4. Slowly add chicken broth and heavy cream, stirring until smooth.
5. Lower heat, add cheddar and Parmesan, and stir until melted. Add red pepper flakes if desired.
6. Toss cooked pasta and sliced chicken into the sauce. Add pasta water if needed to adjust consistency.
7. Garnish with fresh parsley and serve hot.
Notes
Use freshly grated cheese for a smoother sauce.
Adjust Cajun seasoning to your spice preference.
Reserve pasta water to help loosen the sauce if it thickens too much.
