Description

Ingredients

12 oz rigatoni pasta

2 boneless skinless chicken breasts

2 tablespoons olive oil

1 tablespoon Cajun seasoning

3 garlic cloves, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook the rigatoni until al dente according to package directions. Drain and reserve 1/2 cup pasta water.

2. Cut chicken breasts into bite-sized pieces. Toss with Cajun seasoning until evenly coated.

3. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown and fully cooked. Remove and set aside.

4. In the same skillet, lower heat to medium. Add garlic and cook for 30 seconds until fragrant.

5. Pour in heavy cream and bring to a gentle simmer. Stir in mozzarella and Parmesan until melted and smooth. Season with salt and pepper.

6. Add cooked rigatoni and chicken into the skillet. Toss to coat evenly with sauce. Add a splash of reserved pasta water if needed to thin.

7. Serve hot, garnished with fresh parsley if desired.

Notes

Use freshly shredded cheese for the smoothest sauce.

Control the heat by adjusting the amount of Cajun seasoning.

Save some pasta water to adjust the sauce consistency at the end.
