Description

Creamy Cajun Chicken Rotini with Garlic Mozzarella Sauce is a bold and comforting pasta dish made with tender Cajun-spiced chicken, rotini pasta, and a rich, garlicky mozzarella cream sauce. This easy weeknight dinner delivers cozy, cheesy flavor with just the right amount of spice. Perfect for chicken pasta lovers and quick creamy dinners.

Ingredients

8 oz rotini pasta

2 large chicken breasts

1 ½ tablespoons Cajun seasoning

3 cloves garlic, minced

2 tablespoons butter

1 cup heavy cream

1 cup shredded mozzarella cheese

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

Instructions

1. Slice chicken breasts into thin strips and season with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a skillet and cook the chicken until golden and fully cooked. Set aside.

3. In a large pot, boil rotini pasta in salted water until al dente. Drain and save some pasta water.

4. In the same skillet, melt butter and sauté garlic until fragrant.

5. Pour in the heavy cream and stir gently until warm.

6. Add mozzarella and stir continuously until melted and smooth.

7. Add reserved pasta water a little at a time if the sauce needs thinning.

8. Return cooked chicken and rotini to the skillet and toss everything together to coat.

9. Simmer on low for 2–3 minutes, then serve hot.

10. Garnish with parsley or extra mozzarella, if desired.

Notes

Use freshly shredded mozzarella for best melting.

Don’t overcook the garlic—it should be fragrant, not browned.

To adjust spice level, reduce Cajun seasoning or use a mild blend.
