Description

Creamy Cajun Chicken Rotini with Mozzarella Alfredo Sauce is a rich, spicy, and cheesy pasta dish perfect for dinner. This easy one-skillet meal blends juicy chicken with bold Cajun seasoning and a velvety mozzarella Alfredo sauce. Ingredients

1 pound rotini pasta

2 chicken breasts

1 tablespoon Cajun seasoning

1 tablespoon olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons butter

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Bring a large pot of salted water to a boil and cook the rotini pasta until al dente. Drain and set aside.

2. Slice chicken breasts into bite-sized pieces. Toss with Cajun seasoning until evenly coated.

3. In a large skillet, heat olive oil over medium heat. Cook the chicken until browned and cooked through. Remove and set aside.

4. In the same skillet, melt butter and sauté minced garlic for 30 seconds.

5. Add heavy cream and bring to a gentle simmer. Stir occasionally until slightly thickened.

6. Lower the heat and stir in mozzarella and Parmesan cheese. Stir until the sauce is smooth and creamy.

7. Return cooked chicken to the skillet. Add the pasta and toss everything to coat evenly in the sauce.

8. Season with salt and pepper.

9. Garnish with fresh parsley and serve immediately.

Notes

This dish tastes best served fresh but can be stored and reheated with a little added cream.

Feel free to adjust Cajun seasoning to your spice preference.
