Ingredients

1 pound chicken breast

8 ounces spaghetti

1 ½ tablespoons Cajun seasoning

4 garlic cloves, minced

1 tablespoon olive oil

2 tablespoons butter

1 cup heavy cream

1 ½ cups shredded mozzarella cheese

¼ cup grated Parmesan cheese

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons chopped parsley (for garnish)


Instructions

1. Slice chicken breasts into thin strips and season with Cajun seasoning, salt, and black pepper.

2. In a skillet, heat olive oil over medium-high heat and cook the chicken until golden and fully cooked. Remove and set aside.

3. Cook the spaghetti in a pot of salted boiling water according to package instructions. Reserve ½ cup of the pasta water before draining.

4. In the same skillet used for the chicken, melt butter and sauté minced garlic until fragrant.

5. Pour in heavy cream, bring to a simmer, then stir in mozzarella and Parmesan cheese until melted and smooth.

6. Toss cooked spaghetti into the sauce, adding a splash of reserved pasta water if needed to loosen the sauce.

7. Return the chicken to the pan and mix to coat evenly in the sauce.

8. Serve hot, garnished with chopped parsley and extra Parmesan if desired.

Notes

Use freshly grated mozzarella for best melting quality.

Don’t skip reserving pasta water—it helps adjust the sauce’s consistency.

This recipe can be made ahead and reheated with a splash of cream to revive the texture.
