Description

This Creamy Cheesy Ground Beef Taco Soup is a hearty, one-pot Tex-Mex dinner packed with ground beef, cheddar cheese, taco spices, and a velvety cream base. Perfect for weeknight dinners, family gatherings, or meal prep. An easy, comforting soup recipe that’s ready in under 30 minutes!


Ingredients

1 pound ground beef

1 medium yellow onion, diced

2 cloves garlic, minced

2 tablespoons taco seasoning

2 tablespoons tomato paste

1 can diced tomatoes with green chilies (14.5 oz)

2 cups beef broth

1 cup heavy cream

1 cup shredded cheddar cheese

4 ounces cream cheese

1 cup corn (optional)

1 cup black beans (optional)

Salt and pepper, to taste


Instructions

1. Brown the ground beef in a large soup pot over medium heat until fully cooked. Drain any excess grease.

2. Add the diced onion and cook for 5 minutes until softened. Stir in the minced garlic and cook for 1 minute.

3. Mix in the taco seasoning and tomato paste. Stir to coat the beef and toast the spices for 1-2 minutes.

4. Pour in the diced tomatoes (with juices) and beef broth. Stir to combine and bring to a gentle simmer.

5. Reduce the heat and add heavy cream and cream cheese. Stir until the cream cheese melts and the mixture is smooth.

6. Add the shredded cheddar cheese and optional corn and black beans. Stir until the cheese is melted and incorporated.

7. Taste the soup and adjust with salt and pepper as needed. Serve hot with your favorite toppings.

Notes

Use freshly shredded cheese for best melting and flavor.

You can substitute ground turkey or chicken for the beef.

For a spicier soup, add chopped jalapeños or extra chili powder.
