Ingredients
12 lasagna noodles
3 cups shredded cooked chicken
4 tablespoons butter
1/4 cup all-purpose flour
2 cups whole milk
1 cup chicken broth
3 cloves garlic, minced
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups ricotta cheese
1 egg
2 tablespoons chopped fresh parsley
Instructions
1. Melt butter in a saucepan over medium heat. Whisk in flour to form a roux.
2. Slowly pour in milk and chicken broth while whisking to avoid lumps.
3. Add garlic, Italian seasoning, salt, and pepper. Simmer until thickened.
4. Stir in Parmesan cheese until melted and smooth. Set sauce aside.
5. In a bowl, mix ricotta, egg, parsley, salt, and pepper until creamy.
6. Cook lasagna noodles until al dente. Drain and lay flat.
7. In a greased baking dish, spread a layer of sauce, then noodles.
8. Add ricotta mixture, shredded chicken, more sauce, and mozzarella.
9. Repeat layers, ending with sauce and a top layer of mozzarella.
10. Cover with foil and bake at 375°F for 25 minutes.
11. Remove foil and bake 15-20 more minutes until bubbly and golden.
12. Let rest 10 minutes before slicing and serving.
Notes
Use rotisserie chicken for a shortcut.
Add spinach or mushrooms between layers for extra veggies.
Let the lasagna cool before slicing for neater layers.
