Description

This creamy chicken and rice soup is a comforting, hearty dish made with tender chicken, soft rice, and a rich, velvety broth. Perfect for cozy dinners, easy meal prep, and family meals, this classic chicken soup recipe is both nourishing and flavorful.


Ingredients

2 tablespoons butter

1 medium onion chopped

2 medium carrots diced

2 celery stalks chopped

3 cloves garlic minced

1/4 cup all purpose flour

6 cups chicken broth

2 cups cooked chicken shredded

3/4 cup white rice

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley chopped


Instructions

1. Melt butter in a large pot over medium heat and sauté onion, carrots, and celery until softened.

2. Add garlic and cook for about 1 minute until fragrant.

3. Stir in flour and cook for another minute to create a light roux.

4. Slowly pour in chicken broth while stirring continuously to avoid lumps.

5. Add shredded chicken and rice, then bring to a gentle boil.

6. Reduce heat and let simmer until the rice is tender.

7. Stir in heavy cream and cook for a few more minutes until the soup is creamy.

8. Season with salt and pepper, then garnish with fresh parsley before serving.

Notes

For extra flavor, use rotisserie chicken instead of plain cooked chicken.

If the soup becomes too thick, add more broth when reheating.

You can swap white rice with brown rice, but adjust cooking time accordingly.
