Description

Creamy Cowboy Butter Chicken is a rich and flavorful one-skillet chicken dinner made with juicy chicken thighs simmered in a garlicky, spicy cowboy butter sauce with cream and herbs. This creamy chicken recipe is perfect for weeknight dinners and pairs beautifully with mashed potatoes or crusty bread.


Ingredients

1 ½ pounds boneless skinless chicken thighs

2 tablespoons olive oil

4 tablespoons salted butter

4 garlic cloves minced

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

½ teaspoon crushed red pepper flakes (adjust to taste)

1 tablespoon lemon juice

½ cup heavy cream

2 tablespoons chopped fresh parsley

1 tablespoon chopped fresh chives

Salt and pepper to taste


Instructions

1. Cut chicken into bite-sized pieces and season with salt and pepper.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and cooked through. Remove and set aside.

3. In the same skillet, melt butter and add minced garlic. Sauté until fragrant.

4. Stir in Dijon mustard, smoked paprika, red pepper flakes, and lemon juice. Cook for 1 minute.

5. Lower heat and stir in heavy cream. Let it simmer until slightly thickened.

6. Add chopped parsley and chives to the sauce.

7. Return chicken to skillet and coat with the creamy cowboy butter sauce. Simmer 2–3 minutes more.

8. Serve hot over mashed potatoes, rice, or with crusty bread.

Notes

This dish is best served fresh with sauce piping hot.

You can substitute chicken breasts if you prefer leaner meat.

Adjust red pepper flakes to match your spice preference.
