Ingredients
1 cup orzo
5.2 oz Boursin cheese (Garlic & Fine Herbs)
2 cups vegetable broth
1 cup heavy cream
2 cloves garlic, minced
1 shallot, finely chopped
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh parsley or chives, chopped (optional)
Instructions
1. In a large oven-safe skillet, heat olive oil over medium heat. Sauté garlic and shallot for 2–3 minutes until softened.
2. Pour in vegetable broth and heavy cream. Stir in orzo and bring to a simmer for 3 minutes.
3. Add chunks of Boursin cheese to the skillet and stir gently to begin melting.
4. Transfer skillet to a 375°F (190°C) oven and bake uncovered for 18–20 minutes until bubbling and golden.
5. Let rest for a few minutes, garnish with herbs, and serve warm.
Notes
This recipe doesn’t require pre-cooking the orzo.
