Ingredients
10 oz beef tortellini
8 oz Italian sausage
2 cups baby spinach
3 cloves garlic, minced
2 tbsp unsalted butter
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1/4 tsp red pepper flakes (optional)
Instructions
1. Heat olive oil in a skillet over medium heat and brown the Italian sausage until fully cooked. Remove and set aside.
2. Lower the heat and add butter to the same skillet. Once melted, stir in garlic and sauté until fragrant, about 1 minute.
3. Pour in heavy cream and simmer for 3–4 minutes. Add Parmesan cheese and stir until melted. Season with salt, pepper, and red pepper flakes if using.
4. In a separate pot, cook tortellini according to package instructions. Drain and add to the cream sauce.
5. Stir in the cooked sausage and fresh spinach. Simmer until spinach is wilted and everything is combined.
6. Serve hot, topped with extra Parmesan if desired.
Notes
Cream cheese can be substituted for half the heavy cream for a tangier flavor.
Use cheese tortellini if beef isn’t available; both work beautifully.
Add a splash of reserved pasta water if the sauce thickens too much after combining.
