Ingredients
12 ounces rigatoni pasta
1 pound boneless skinless chicken breasts or thighs
3 tablespoons butter
1 tablespoon olive oil
4 cloves garlic minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley chopped
to taste salt
to taste black pepper
Instructions
1. Bring a large pot of salted water to a boil and cook the rigatoni according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
2. While the pasta cooks, heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Season chicken with salt and pepper, sear until golden and cooked through. Remove and set aside.
3. Lower heat to medium, melt remaining butter in the same skillet. Add minced garlic and cook until fragrant, about 1 minute. Pour in chicken broth and simmer, scraping up any browned bits.
4. Stir in heavy cream and bring to a gentle simmer. Add Parmesan and stir until melted and sauce thickens slightly.
5. Return chicken to the skillet and add drained rigatoni. Toss to coat, adding reserved pasta water if needed. Garnish with parsley and serve hot.
Notes
Let pasta water cool slightly before adding to sauce for best texture.
For extra flavor, try adding mushrooms or spinach to the sauce.
Use freshly grated Parmesan for the creamiest result.
