Ingredients
1 lb shrimp, peeled and deveined
3 cloves garlic, minced
2 tbsp butter
1 cup heavy cream
1/3 cup parmesan cheese, grated
Salt, to taste
Black pepper, to taste
1 tbsp olive oil
3 cups mashed potatoes, prepared
1 tbsp fresh parsley, chopped (optional)
Instructions
1. Pat the shrimp dry and season with salt and pepper.
2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.
3. Sear shrimp for 2 minutes per side until just pink and cooked through. Remove and set aside.
4. Reduce heat to medium. Add remaining butter and garlic to the pan, sauté until fragrant.
5. Stir in the cream and simmer for 3–4 minutes to thicken slightly.
6. Add parmesan and stir until smooth and melted.
7. Return shrimp to the skillet, toss in sauce, and adjust seasoning.
8. Serve shrimp and sauce over a bed of hot mashed potatoes.
9. Garnish with chopped parsley if using.
Notes
Use jumbo or large shrimp for the best texture.
If the sauce gets too thick, stir in a splash of milk or cream.
For extra flavor, add a pinch of red pepper flakes or a squeeze of lemon.
