Ingredients
8 oz fettuccine pasta
1 lb large shrimp peeled and deveined
2 tbsp butter
1 tbsp olive oil
4 cloves garlic minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 tsp salt
1/2 tsp black pepper
2 tbsp chopped parsley
1 tbsp lemon juice
1/4 cup reserved pasta water
Instructions
1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve some pasta water before draining.
2. Heat olive oil and butter in a large skillet over medium heat. Add shrimp, season lightly with salt and pepper, and cook until pink then remove from pan.
3. In the same skillet sauté minced garlic until fragrant without browning.
4. Pour in heavy cream and let it gently simmer. Stir in Parmesan cheese until melted and smooth.
5. Add a splash of reserved pasta water if the sauce is too thick.
6. Return shrimp to the pan and toss with the sauce.
7. Add drained pasta and mix until fully coated.
8. Finish with lemon juice and chopped parsley then serve immediately.
Notes
Do not overcook shrimp because they become rubbery quickly once fully pink.
Reserve pasta water because it helps loosen and bind the sauce smoothly.
Use freshly grated Parmesan for better melting and flavor.
