Ingredients
1 tablespoon olive oil
1 medium yellow onion, chopped
2 medium carrots, diced
2 ribs celery, diced
3 cloves garlic, minced
6 cups chicken broth
2 cups cooked shredded chicken
3/4 cup orzo pasta
3/4 cup heavy cream
1 lemon, zested and juiced
2 tablespoons fresh dill or parsley, chopped
Salt and pepper to taste
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add onion, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
2. Stir in garlic and cook for another minute until fragrant.
3. Pour in chicken broth and bring to a simmer. Add shredded chicken and let it simmer for 5 minutes.
4. Stir in orzo pasta. Cook for 8 to 10 minutes until the pasta is tender, stirring occasionally.
5. Reduce heat to low. Add heavy cream, lemon juice, and lemon zest. Stir and let it warm through without boiling.
6. Add chopped dill or parsley. Taste and season with salt and pepper. Serve hot.
Notes
This soup thickens as it sits; add extra broth when reheating.
Use rotisserie chicken for a shortcut.
To freeze, undercook the orzo slightly to keep texture intact.
