Description

This Creamy Mushroom Garlic Chicken Alfredo with Hot Honey Roasted Potatoes is the ultimate comfort food dinner. Tender chicken, earthy mushrooms, silky Alfredo sauce, and crispy roasted potatoes drizzled in spicy-sweet hot honey make this a show-stopping, indulgent meal. Perfect for cozy nights or impressing guests, it combines bold flavors and creamy textures in one irresistible dish.


Ingredients

2 chicken breasts

2 cups mushrooms, sliced

4 cloves garlic, minced

1 cup heavy cream

1 cup Parmesan cheese, freshly grated

8 oz fettuccine pasta

2 tablespoons butter

1.5 pounds Yukon gold potatoes, diced

2 tablespoons olive oil

2 tablespoons hot honey

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (optional)


Instructions

1. Preheat oven to 425°F. Toss diced potatoes in olive oil, garlic, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway. Drizzle with hot honey after baking.

2. Season chicken breasts with salt and pepper. In a skillet over medium heat, sear them in olive oil and butter for 5-6 minutes per side until golden and cooked through. Remove and rest.

3. In the same pan, add more butter and sautée mushrooms until browned. Add garlic and cook for 1 minute until fragrant.

4. Pour in heavy cream. Simmer gently. Stir in Parmesan and season to taste. Let simmer until slightly thickened.

5. Cook fettuccine pasta per package instructions. Reserve 1 cup of pasta water, then drain. Toss pasta into the Alfredo sauce, using reserved water to loosen if needed.

6. Slice the rested chicken and serve on top of the sauced pasta. Plate with roasted potatoes. Garnish with fresh parsley if desired.

Notes

Use baby bella or shiitake mushrooms for the best flavor.

Adjust hot honey drizzle to your spice preference.

Add more cream or reserved pasta water to loosen the sauce before serving leftovers.
